MICROWAVE CARROT N SPINACH FRIED RICE
This is delicious fried rice cooked with a cup of finely chopped carrots and the dark soya sauce which gives a gorgeous and very pleasant colour to this dish instead of green rice. Cooking greens in microwave oven retains their green colour also they get cooked very easily.
Ingredients
Basmati rice+3 1/2cups of water
(cooked with 1tbsp of oil in microwave oven for 20 minutes)
(cooked with 1tbsp of oil in microwave oven for 20 minutes)
: 2 cups
Carrots chopped
: 1 cup
Spinach green (chopped finely)
: 1 cup
Ginger pieces (minced)
: 1 tsp
Garlic pieces (minced)
: 1 tsp
Dark soya sauce
: 1 tbsp
Chilli Sauce
: 1 tbsp
Tomato ketchup
: 1 tbsp
Green Spring onions (chopped)
: 2 nos
Salt
: To taste
Pepper powder
: 1/2 tsp
White pepper powder
: 1/4 tsp
Sesame Oil
: 2 tbsp
Method
- Heat the sesame oil, minced ginger and minced garlic pieces in a microwave safe bowl for 5 minutes in high.
- Add the chopped carrots with soyasauce, chilli sauce, tomato ketchup and cook again for 5 minutes.
- Add the chopped spinach, pepper powder and salt (if needed) , give a stir and cook for 2minutes, dont cook the spinach much, try to keep a bit tender.
- Take the bowl from the microwave oven, add the already cooked rice and white pepper powder, toss everything gently.
- Now add the finely chopped green spring onions and cook for 2 minutes again in microwave oven.
