PINEAPPLE CAKE 
This cake is quick and easy to make and they serve a crowd. They're also much easier to serve and eat than layer cakes,so are ideal for buffets and outdoor parties.
Ingredients
Wholemeal self-raising flour |
2 cups |
Baking powder |
1 tsp |
Mixed spice |
1 tsp |
Sultanas |
3 ounces (85g) |
Eggs |
2 |
Honey |
1/4 cup |
Oil |
1/4 cup |
Lemon juice |
1 tbsp |
Unsweeten crushed pineapple |
14 ounce (400g) |

Method

Mix the dry ingredients and sultanas. Beat the eggs, honey, oil and lemon juice ogether until fluffy. Stir in the pineapple, then lightly fold the dry ingredients into the fruit mixture.
- Turn into a greased ring pan and microwave on High for 9 to 10 minutes. Let stand for at least 10 minutes before turning out.
