PLUM AND CINNAMON CAKE 
Every once in a while a great cake comes along that has the ability to make you famous among your friends and family. This is such a cake.
Ingredients
Stoned plums, fresh or canned and drained |
1 - 1 1/2 pound(500 to 750g) |
Thick yoghurt |
2 tbsp |
Ground cinnamon |
2 tsp |
Unsweetened apple-blackcurrant juice |
3 tbsp |
Honey |
1 tbsp |
Wholemeal self-raising flour |
1 1/2 cups |
Baking powder

Method

Slice 2 to 3 plums (or use halved plums if canned) to line the bottom of a greased ring pan. In a blender or food processor, puree the remaining plums with the other wet ingredients (not too smoothly). Mix the dry ingredients, then lightly fold into the fruit puree.
- Pour into the ring pan, elevate in the oven and microwave on High for 8 to 10 minutes. Cool at least 5 to 10 minutes before turning out.
