MICROWAVE SOUTH INDIAN SPECIAL AVIAL Vegetarian-Dish

Avial is a wholesome concoction of fresh vegetables put together in thick gravy. Avial goes well with rice and accompanied by rasam or sambhar.



Ingredients

For Vegetable
Carrot (chopped)
: 100 gms
Beans (chopped)
: 100 gms
Bottle gourd (chopped)
: 50 gms
Brinjals (chopped)
: 100 gms
Potatoes (chopped)
: 100 gms
Drumsticks
: 50 gms
Cauliflower (cut into florets)
: 100 gms
For Paste
Dahi (beaten)
: 200 gms
Dry red chillies
: 2- 3
For Tempering
Dahi (beaten)
: 200 gms
Dry red chillies
: 2 - 3
Curry leaves
: 6 - 8
Mustard seeds
: 1 tsp
Oil
: 1 tbsp
Salt and chilli powder
: To taste

Microwave South Indian Special Avial

Method

  • Make a paste of coconut and green chillies.
  • Wash and chop all vegetables to approx. 1 inch pieces. Microwave (covered) in a micro safe bowl with ½ cup water at 100% power for 9 - 10 mins.
  • Add microwaved vegetables, prepared coconut and chilli paste, beaten curd and salt and pepper. Microwave (covered) at 60% power for 6 mins.
  • In another microwave safe bowl microwave oil at 100% power for 30 secs. Add mustard seeds, dry red chillies and curry leaves. Microwave at 100% power for 2 mins.
  • Pour this tempering over cooked vegetables and microwave for 2 mins at 100% power.
  • Allow to stand for 5 mins.
  • Serve hot with poories and rice.
