PORK RECIPES



PorkMeat derived from pigs is known as pork and is consumed all over the world and also in India . Pork is a very common form of meat consumed from ancient times since 5000 B.C.

Pork is consumed in several forms such as roasted pork, smoked, grilled or cured. Like all meats, pork too has numerous nutritional benefits attached to it. Pork is a good source of Vitamin C, Niacin, Phosphorus, proteins, Vitamin B12, Vitamin B6, Thiamin, Niacin, Selenium and Zinc. But it is very high in Cholesterol. Pork is also found to be a good source of Riboflavin, potassium, iron, magnesium and pantothenate.

Pork is said to be the king of all meats. It blends with all flavours and spices and hence innumerable dishes can be prepared using pork meat. It is also a common ingredient of sausages. Charcuterie is the branch of cooking devoted to prepared meat products from pork. Pork is a taboo food item in Islam and Judaism, and its consumption is forbidden in these two religions. Upper caste Hindus are also forbidden from taking pork. Pork is one of the most widely eaten meats in the world, accounting for about 38% of meat production worldwide. Pork is preferred over other meat due to economic and aesthetic reasons, becuase the pig is easy to feed and is not used for labour. The colours of the meat and the fat of pork are regarded as more appetizing, while the taste and smell are described as sweeter and cleaner. Pork is also considered easier to digest. PORK VINDALOONon-vegetarian-Dish

Ingredients

  • dried red chilies 6
  • cumin seeds 1 Tbsp.
  • mustard seeds 1 Tbsp.
  • turmeric 1 tsp.
  • curry powder 3 tsp.
  • peppercorns 5
  • cardamom 5
  • cloves  5
  • cinnamon  1 inch long  6 sticks
  • salt to taste
  • vinegar 1 cup 
  • Pork  2 lb.(cut into cubes)
  • butter, melted 2 Tbsp.
  • bay leaves 3
  • fresh ginger  chopped  1 Tbsp.
  • garlic  crushed 2 cloves
  • garlic, pulped in 1 4 cloves
  • water 1 cup 
  • large onion  sliced  1

Method

  • Grind the first 10 ingredients in a blender adding 1 cup of vinegar into a smooth paste.
  • Place the pork in a dish, cover with the paste and leave it to soak for 2 hours.
  • In a fry pan, heat the butter and then add meat mixed with spices and vinegar.
  • after 2 minutes add the remaining ingredients.
  • Simmer gently for 2 hours or until the meat is tender.
  • Serve hot with rice.

PORK CURRY Non-vegetarian-Dish

Ingredients

  • pork (trimmed and cut in squares 2 inch) 2 lb.
  • cardamom 2
  • cinnamon stick  1 inch  piece
  • cloves 4 whole
  • peppercorns 24
  • coriander seeds 1 Tbsp.
  • medium onions 2
  • fresh ginger chopped 1/2 inch
  • garlic 1 clove
  • green hot peppers 1-2
  • almonds (optional) 10
  • saffron 1/2 tsp.
  • yogurt 5 Tbsp.
  • hot milk 2 Tbsp.

Method

  • Prick pork with fork. Grind next 5 ingredients in a blender ]adding enough water
  • to make it into a juicy fine paste.
  • Mix this with yogurt and smear on pork. Let it stand for 1 hour. Grind onion, ginger, garlic and hot peppers adding enough water to make it into a fine juicy paste. Blanch and slice almonds.
  • Heat 2 tablespoons of milk for 1 minute and soak saffron in it. Heat oil and fry onion paste in it for 2- 3 minutes.
  • Add pork. Fry until light brown, stirring continuously. Add salt and 1 cup of warm
  • water.
  • Cover with tight lid and cook on low heat until tender and dry.
  • Add saffron and almonds. Stir and cook for 5 minutes. Remove from heat and serve hot

PORK CHOPS RECIPENon-vegetarian-Dish

Ingredients

  • 1 ts Salt
  • 5 to 6 Pork chops
  • 1 c Uncooked rice
  • 1 tb Instant minced onion
  • 1/2 ts Curry powder
  • 8 oz Tomato sauce
  • 1 c Plus water.
  • 1/2 c Raisins
  • 1/2 c Slivered blanched almonds

Method

  • Sprinkle salt in bottom of large skillet and heat.
  • Add pork chops and brown on both sides.
  • Combine rice, raisins, almonds, onion and curry powder. Spoon over and around chops.
  • Pour on tomato sauce and water.
  • Cover and simmer for 30 minutes until rice and pork are tender.
  • Add more water as needed.
  • Serves 5 to 6 people.

PORK KURMA RECIPENon-vegetarian-Dish

Ingredients

  • 500 g Pork Stir fry or Pork Schnitzel (cut into 1-2 cm strips)
  • 1 onion, peeled and chopped
  • 400g can Indian Spiced Tomatoes
  • 1/2 cup thick natural unsweetened yoghurt
  • 80g pouch Korma Curry Paste
  • 250 g waxy red skinned potatoes, washed and diced into 1.5 cm pieces
  • 2 tbsp freshly chopped coriander.

Method

  • Quickly stir fry Pork Stir Fry in a hot wok or frying pan in a dash of oil, until golden and the set aside.
  • Cook onion until just beginning to soften, add potatoes and Korma Curry Paste and cook stirring for 2-3 minutes.
  • Add Indian Spiced Tomatoes and 1/4 cup water. Return pork to the sauce, cover and simmer gently for 20 minutes or until pork and potatoes are tender.
  • Remove from heat and stir in yoghurt and coriander. Serve hot with rice and naan bread.
  • Serves 4 people.

PORK WITH SWEET MASALA RECIPENon-vegetarian-Dish

Ingredients

  • 400 g carrot thin slices
  • A Few Celery Chopped, for garnishing
  • 2 Tablespoon Ghee For frying
  • 1 Inch Ginger Thin slices
  • A Few Mint Leaves (Pudina) Chopped, for garnishing
  • 4 Large Onions Thin slices
  • 1 Teaspoon Pepper Powder To be added
  • 1 Kilogram Pork Cut in thin slices
  • 1/2 Teaspoon Salt To be added
  • 2 Tablespoon Sugar To be added
  • 2 Tablespoon Vinegar To be added
Pork with sweet masala recipe

Method

  • Wash and cut the pork in thin slices.
  • Wash and scrape the carrots and ginger. Peel the 4 onions. Make thin round slices of 3 onions, carrots and ginger.
  • Make slices of one onion for frying.
  • In a vessel large enough to contain the pork, heat two teaspoons of ghee, and fry the one sliced onion, kept for frying.
  • When it has turned golden brown, put the pork pieces and fry on both side, till the meat turns brown.
  • Put pepper powder, vinegar and salt and cook for some time.
  • Add two tea cups of boiling water in the vessel, and continue to cook for an hour on medium flame
  • Add the other three sliced onions, ginger, mint, celery and carrots, and cook.
  • When the vegetables are cooked, add sugar.
  • Boil till you get a thick gravy.

ROASTED PIGLING RECIPENon-vegetarian-Dish

Ingredients

  • 16 Nos Cloves (spice) For grinding
  • 4 Tablespoon Dalda (Vegetable Ghee) or Pork Fat
  • 25 Flakes Garlic For grinding
  • 4 Inch Ginger For grinding
  • 1 Teaspoon Jeera/Cumin Seeds For grinding
  • 2 Teaspoon Pepper Corns For grinding
  • 4 Legs Pigling (Pork) Wash Legs, and prick slightly.
  • 2 Tablespoon Salt For grinding
  • 1 Teaspoon Sugar or a bit of jaggery
  • 2 Inch Turmeric/Haldi For grinding
Roasted pigling recipe

Method

  • Wash the legs of the pigling well, prick slightly and rub in the salt and keep aside.
  • Grind all spices to fine paste with a little water and apply this paste to the legs.
  • Sprinkle a tablespoon of vinegar and keep aside for an hour or so.
  • Then take a pan, place it on slow fire, pour ghee or fat and arrange the legs.
  • Allow to sizzle for a while and then add 3 or 4 cups of warm water including the water with which the grinding stone has been washed.
  • When the water is almost dried and the meat is cooked, remove the pan from the fire.
  • With the help of a fork and knife ( do not use fingers) slice the meat off the legs very neatly and fry these pieces in ghee or fat in a frying pan.
  • Arrange the meat slices on a flat dish, sprinkle the gravy that is left in the pan over the meat and surround the meat with salad.

PORK SORPATEL RECIPENon-vegetarian-Dish

Ingredients

  • 3 Teacup Water
  • Half kilogram Pork - liver
  • 1 Teacup Pork - blood
  • 1.5 Kilogram Pork
  • A Little Salt
  • 10 Nos Cloves (spice) For grinding
  • 20 Nos Chillies, Red Dry For grinding
  • 1 Dessertspoon Jeera/Cumin Seeds For grinding
  • 1 Dessertspoon Mustard Seed For grinding
  • 1 Inch Turmeric/Haldi For grinding
  • 2 Sticks Cinnamon For grinding
  • 3 Nos Onions For grinding
  • 4 Tablespoon Vinegar For grinding
  • 1 Teaspoon Pepper Corns For grinding
  • 6 Nos Chillies, Green For mince masala
  • 1 Tablespoon Coriander/Dhania For mince masala
  • 1 Inch Ginger For mince masala
  • 2 Pods (whole) Garlic For mince masala

Method

  • Cut the pork and liver in small bits about half centimeter cubes. and wash well.
  • The blood comes generally in a powder form, so wash it, strain it, and powder it.
  • Grind the masala, and keep aside. Prepare the mince masala.
  • Mix both these with the meat, liver, vinegar and salt. Cook it for one hour.
  • Then add blood (optional) fifteen minutes before putting the stove off.
  • After the blood is put, simmer the curry.
  • dish turns more delicious if it is cooked a day before. It can remain for many days.

Ingredients

  • 15 Large Chillies, Kashmir For Grinding
  • 1 Tablespoon Cooking Oil For Tempering
  • 2 Pods (whole) Garlic For Grinding
  • 2 Teaspoon Jeera/Cumin Seeds For Grinding
  • 2 Teaspoon Mustard Seed For Grinding
  • 1 Large Onion Sliced, for tempering
  • 1 Kilogram Pork
  • 200 Grammes Potatoes Boiled, peeled and cut
  • 1 Teaspoon Salt for taste
  • 1 Inch Turmeric/Haldi For Grinding
  • 1/2 Teacup Vinegar For Grinding
Masala pork recipe

Method

  • Wash the meat, and cut it in 1" pieces.
  • Peel the garlic, remove the stems of chillies and grind all the stuff kept for that purpose, in 1/2 tea cup of vinegar.
  • Mix the pork pieces with the ground masala. Keep it to marinate for 2 hours.
  • In a large enough vessel to contain the port, pour the cooking oil or ghee and heat it well, and then fry the sliced onion till it turns golden brown.
  • Then put the marinated pork and fr it well. Lower the flame, and put 1 teacup of boiling water, and close the vessel with a 1" deep thali, in which pour cold water, to keep the condensation inside, to keep the pork moist.
  • When the top water turns hot, remove it and refresh it with more cold water.
  • Cook for an hour on slow fire.
  • When almost done, put the boiled, peeled potatoes cut in fours, and allow them to absorb the masala.
  • Close the lid, with cold water and continue for about 15 minutes more, then open and check the taste.
  • Add salt and vinegar if necessary.

Ingredients

  • 2 Nos Bay Leaves (Cinnamon)
  • 6 Nos Chillies, Green
  • 20 Nos Chillies, Red Dry
  • 2 units Cinnamon 10 Nos Cloves (spice)
  • 2 Tablespoon Coriander/Dhania
  • 2 Pods (whole) Garlic
  • 1 units Ginger
  • 1 Tablespoon Jeera/Cumin Seeds
  • 5 Medium Onions
  • 15 Nos Pepper Corns
  • 1.5 Kilogram Pork 1 Kilogram Potatoes
  • Little Salt
  • 1 Inch Turmeric/Haldi
  • 3 Tablespoon Vinegar
  • 3 Teacup Water

Method

  • Cut and wash the meat. Grind the masala. Slice onions, etc.
  • Mix meat, masala, cloves, cinnamon, salt and vinegar to taste, with water.
  • Cook for one hour till the meat is tender, then add potatoes, sliced green masala and ghee.
  • Boil till everything is cooked.
