CHEESE AND BEETROOT SOUP Non-Vegetarian-Dish

It is a quick and easy recipe to make.Cheese Soup is a great tasting smooth and creamy soup.



Ingredients

Hot water
: 2 cups
Butter
: 60g
Cream
: 1/2 cup
Blue cheese crumbled
: 60g
Beetroot chopped
: 3
Small chicken stock cube crumbled
: 1

Cheese and Beetroot Soup

Method

  • In a large microwave bowl combine the butter and beetroot then cover and cook on high for about 6 minutes or until the vegetable are tender.
  • Add the water and stock cube then cover and cook on high for another 6 minutes.
  • Blend the mixture in batches until smooth then return it to the bowl. Add the cheese and cream and then reheat without boiling.
  • Serve the Beetroot and Cheese Soup sprinkled with a little extra cheese on top and cook toast fingers to have with it.
