KADDU SABZI Vegetarian-Dish

Kaddu ki sabzi is one of the popular recipes prepared on Navratri. Liked by most of the people, it is perfect in case of Navratri fast, in which grains and vegetables are not allowed. In fact, a Navratra thali is incomplete without kaddu ki sabzi.



Ingredients

Pumpkin (Kaddu) (peeled and cubed)
: 750 grams
Green Chillies (Hari Mirch) (slit longways)
: 2 tbsp
Ginger (Adrak) (thinly sliced)
: 1 tbsp
Fresh Coriander/Cilantro Leaves
: A bunch
Curry Leaves (Karhi Pattay)
: 10
Fenugreek Seeds
: 1 tsp
Cumin Seeds (Sufaid Zeera)
: 2 tsp
Red chille pwdr
: 1 tsp
Turmeric Powder (Haldi)
: 1/2 tsp
Salt
: To taste
Sugar
: 1 tbsp
Coriander Powder
: 1 tbsp
Asafoetida (Heeng)
: A pinch
Tamarind Pulp
: 1 tsp
Cooking Oil
: 2 tbsp

Kaddu Sabzi

Method

  • In a microwaveable dish, combine the oil, asafoetida, fenugreek seeds, cumin seeds, curry leaves and ginger. Mix and cook covered in microwave on HIGH for 3 minutes.
  • Add the pumpkin cubes, green chillies, salt, red chilli powder, turmeric powder, coriander powder and sugar. Mix thoroughly and cook covered on HIGH for 5 minutes.
  • Stir then cook covered at 70% for another 15 minutes, stirring once in between. Should be cooked and done, if not, cook for another few minutes or so or until pumpkin is cooked and done.
  • Mix in the tamarind pulp, and cook at 30% for 5 minutes and mix. Finally garnish with the coriander leaves.
