SPINACH RICE CASSEROLE
This casserole dish is a very tasty recipe along with cheese.
Ingredients
Chopped spinach, frozen (10 oz.)
: 1 pkg.
Eggs
: 3
Evaporated milk
: 1 (13 oz.)
Rice
: 2/3 cup
Pasteurized cheese spread, cut into cubes
: 8 oz.
Onion
: 1/4 cup
Salt
: 1/2 tsp
Pepper
: 1/4 tsp
Method
- Microwave spinach in a 1 quart casserole dish at high 5 to 6 minutes.
- Drain well and set aside. Mix eggs, milk, rice, cheese, salt and pepper in 2 quart bowl.
- Microwave high 5 to 6 minutes stirring after 2 minutes until cheese melts. Add onion and spinach to rice.
- Pour into 10 x 6 x 2 inch baking dish. Microwave high 10 to 12 minutes.
