BEEF



BeefBeef is the name for meat from bovines like cow, buffaloes, etc. It is one of the principal meat sources in Australia, Europe and America dn is also now used in Africa, and parts of Asia like India.

Beef is a good source of minerals like zinc, selenium, phosphorus, iron and Vitamin B. It is also a significant source of carnitine and creatine. Quality beef just cannot match any other meat in taste. It satisfies the nutritional needs of the whole family. High-quality proteins, like lean beef, provide the right amounts of essential amino acids the body needs to function properly. Beef is essentially high in fat. Some cuts of beef are fairly low in fat. If you eat beef, keep in mind that it is almost 100% saturated fat. A healthy low-fat lifestyle can allow for an occasional meal featuring beef, but they should be limited to no more than once a week. And, keep in mind that the longer you are away from eating beef, the less your body is going to tolerate it. Following are some of the favorite Indian beef dishes.

BEEF ULARTHU Non-vegetarian-Dish

Ingredients

  • Beaf   1 kg
  • Onions slices 4 tsp
  • Oil 5 dsp
  • Cinnamon 1" 1 piece
  • Salt  to taste 
  • Vinegar 3 dsp
  • Ginger minced   2 tsp
  • Curry leaves  2 sprigs
  • Turmeric powder  1 tsp
  • Cloves    10
  • To   ground : 

  • Coriander seeds   4 dsp
  • Turmeric  1" piece
  • Cummin seeds   1 tsp
  • Garlic  1 tsp
  • Chilly powder   1 1/2  tsp
  • Pepper  1 tsp
  • Sounf  1 tsp
  • Shallots   2 tsp

Method

  • Fry coriander, turmeric, spices, pepper, cummin and the sounf together and before removing, stir in the chilly powder.
  • Grind it along with the garlic and shallots.
  • Pour the oil, saute the ginger, curry leaves and the onions for 3 minutes,
  • add the ground masala.
  • Fry well adding the meat pieces.
  • Pour 3 or 4 cups of water, vinegar and salt and cook.
  • When the meat is cooked soft and gravy thick, remove from fire.

BEEF VINDALOONon-vegetarian-Dish

Ingredients

  • dried red chilies 6
  • cumin seeds 1 Tbsp.
  • mustard seeds 1 Tbsp.
  • turmeric 1 tsp.
  • curry powder 3 tsp.
  • peppercorns 5
  • cardamom 5
  • cloves  5
  • cinnamon  1 inch long  6 sticks
  • salt to taste
  • vinegar 1 cup 
  • beef 2 lb.(cut into cubes)
  • butter, melted 2 Tbsp.
  • bay leaves 3
  • fresh ginger  chopped  1 Tbsp.
  • garlic  crushed 2 cloves
  • garlic, pulped in 1 4 cloves
  • water 1 cup
  • large onion  sliced  1
Beef Vindaloo

Method

  • Grind the first 10 ingredients in a blender adding 1 cup of vinegar into a smoothpaste.
  • Place the beef in a dish, cover with the paste and leave it to soak for 2 hours.
  • In a fry pan, heat the butter and then add meat mixed with spices and vinegar.
  • After 2 minutes add the remaining ingredients.
  • Simmer gently for 2 hours or until the meat is tender. Serve hot with rice.

BEEF MASALANon-vegetarian-Dish

Ingredients

  • Beef   3

  • Garam Masala 1 tsp
  • Turmuric powder  ½ tsp
  • Pepper powder  to taste

Method

  • Slice onion and green chillies into thin slices.
  • Chop garlic. Slice beef into two slices lenghwise and then slice into half inch pieces.
  • Heat oil in a pan and fry minced garlic till browned.
  • Add onion and green chilly and fry till almost browned.
  • Now add beef pieces and all other ingredients and saute on medium heat until beef pieces is cooked.
  • Top with chopped cilantro and serve hot with rice .

MASALA BEEF FRYNon-vegetarian-Dish

Ingredients

  • whole peppercorns 1 1/2 tsp.
  • whole cumin seeds 2 tsp.
  • stewing beef 2 lb.
  • salt to taste
  • turmeric  1 1/2 tsp.
  • large onions  chopped 1 1/2
  • oil 4 Tbsp.
Masala Beef fry

Method

  • Grind peppercorns and cumin seeds in the blender, adding enough water to make
  • it into a fine paste.
  • Cook beef with the masala paste, salt and turmeric until beef becomes tender.
  • Saute onion in 4 tablespoons of oil until golden brown.
  • Add the meat to the onions and fry until meat becomes nice and brown.
  • Serve hot

CLEAR ROYAL BEEF SOUP Non-vegetarian-Dish

Method

  • Cook beef with onions,celery, pepper and salt.Strain and get broth.
  • Allow it to cool and collect the fat which settles on top.
  • Melt this fat along with the butter on slow fire.
  • Add a few slices of onions and cook till onions are brown.
  • Beat the white of egg..Mix it well with broth.and add fried onions.
  • Keep on slow fire till it turns brown.
  • Add a few drops of lime juice and continuecooking for some more time.
  • Allow it to cool and strain it.

INDIAN BEEF STEW RECIPE Non-vegetarian-Dish

Ingredients

Boneless beef round cut in 1 cubes

Indian beef stew recipe

Method

  • Pat beef dry on paper towels. Heat oil in large Dutch oven over high heat. Add half the beef and brown well on all sides. Transfer with a slotted spoon to a bowl. Repeat with remaining beef and set aside. Drain oil.
  • Heat oven to 350°F. Melt butter in Dutch oven over medium heat. Add onions, garlic, ginger and jalape=F1o. Cook, stirring occasionally, until lightly browned, about 10 to 15 minutes. Add coriander, cumin, turmeric, salt and pepper and cook 2 minutes. Add beef, tomatoes with liquid and 2 cups water; bring to a boil. Cover and bake 1 1/2 hours or until beef is tender.
  • Meanwhile, bring 1 1/2 quarts of salted water to a boil in a large saucepan. Add cauliflower and simmer until tender, 5 to 7 minutes. With a slotted spoon, transfer to a medium bowl. Cook carrots in the same saucepan until tender, 5 to 7 minutes, and then add to the cauliflower. Cover potatoes with hot water in a small saucepan and bring to a boil. Cook until tender, 10 to 15 minutes. Drain and add to vegetables.
  • Add vegetables and peas to Dutch oven. Cover and bake until heated through, about 10 minutes. (Can be made ahead. Cool. Cover and refrigerate up to 3 days. Heat in 350°F. oven 20 minutes.) Makes 8 servings.

INDIAN PORK CHOPS RECIPE Non-vegetarian-Dish

Method

  • Add more water as needed. Serves 5-6.

Beef malabar recipe

Method

  • Curry fans will enjoy this spicy beef dish from the Malabar Coast, a region of South India. Raisin-Almond Rice complements the curry.
  • Cut off any visible fat from beef. Cut into 1/4" strips about 2" long. (For ease in slicing, partially freeze beef before slicing.)
  • Saut onion and garlic in the oil in heavy saucepan or skillet. Add spices and saut a few minutes.
  • Coat beef with the flour. Add to saucepan and brown lightly.
  • Add lemon rind, lemon juice and broth.Bring to boiling.
  • Cover and simmer 25 to 30 minutes or until meat is tender, stirring occasionally.
  • Serve with the Raisin-Almond Rice.

KAPPA BEEF RECIPE Non-vegetarian-Dish

Method

  • Cook tapioca and meat separately.
  • Fry onion, ginger and garlic in a tablespoon oil, in a pan.
  • When brown,add rest of the masala and fry little more.
  • Add meat and cook for 5 minutes.
  • Mix cooked tapioca and keep on low fire for few more minutes.
  • Remove and serve hot.

BEEF CUTLET RECIPE Non-vegetarian-Dish

  • Cook it with a glass of water, Water must get dried up. Then mince it in a mixer .saute onion, green chillies, ginger , and curry leaves in a pan
  • Add cooked meat , minced potato, garam masala. Put off the fire.
  • Knead it softly.make balls and roll it in a required shape.dip it in bubbled egg and cover it with bread crumbs.
  • Fry it in a hot pan till it gets brown color.

BEEF KABAB RECIPE Non-vegetarian-Dish

Ingredients

Minced beef

Method

  • Finely chop the spring onions and green chillies.
  • Put minced meat in a bowl, combine all ingredients and mix well.
  • Make sure all ingredients are well blended with the meat.
  • Refrigerate for minimum an hour.
  • Light charcoal and wait for it to get a layer of ash on top. (This will reduce the temperature of the fire.)
  • Make large balls out of the mixture and mold them on to kabab skewers.
  • Put skewers on fire.
  • Grill until it is brown on all sides and well cooked.
