BABY CORN AND SPINACH SOUPVegetarian-Dish

This light and healthy soup with mushrooms and spinach is just the right soup for spinach lovers. The pepper add a nutty flavour to the soup.



Ingredients

Baby corn( sliced finely)
: 1 cup
Spinach (cut finely)
: 1/4 cup
Spring onion(cut finely)
: 1/4 cup
Garlic(cut finely)
: 2 pods
Salt
: To taste
Pepper powder
: To taste
Butter
: 2 tsp
Coconut milk
: 3 cups

Baby Corn and Spinach Soup

Method

  • Set microwave to medium power.
  • Mix butter, spring onion, garlic in a vessel and keep it in for 1 minute.
  • Add baby corn, close the vessel with a lid and keep it in for 3-5 minutes.
  • Add spinach, salt, pepper powder and keep it in for 2 minutes.
  • Add coconut milk, stir well, keep it in the oven for 2 minutes.
  • Remove from the oven when done and serve hot.
