BATETA NU SHAAK Vegetarian-Dish

This recipe involves potatoes cooked with tomato and Gujarati spices.



Ingredients

Potatoes, peeled and cubed
: 1 1/2 cups
Mustard (rai) seeds
: 1/2 tsp
Cumin seeds (jeera)
: 1/2 tsp
A pinch asafoetida (hing)
:
Turmeric powder (haldi)
: 1/4 tsp
Chilli powder
: 1/2 tsp
Small green chilli, finely chopped
: 1
Ginger, grated(1/4") piece
: 6 mm.
Tomato, finely chopped
: 1/2
Coriander-cumin seed (dhania-jeera) powder
: 1 tbsp
Sugar
: 1 tbsp
Oil
: 2 tbsp

Bateta Nu Shaak

Method

  • Put the potato cubes in a glass bowl along with salt. Cover with a lid and microwave on HIGH for 4 minutes till they are cooked.
  • In another glass bowl, combine the oil, mustard seeds, cumin seeds, asafoetida, turmeric powder, chilli powder, green chilli and ginger and microwave on HIGH for 2 minutes.
  • Add the tomato and microwave on HIGH for 1 minute 30 seconds.
  • Add the potatoes, coriander-cumin seed powder, sugar and salt, mix well and microwave on HIGH about 30 seconds.
  • Garnish with the chopped coriander and serve hot.
