This cashew rice resembles very much in between jeera rice and ghee rice and tastes great.


Basmati Rice
: 1 cup
Coconut milk
: 1 cup
: 1 cup
Cumin seeds
: 1 tsp
Cashew pieces
: 20 nos
: 3 tbsp
Onion (chopped)
: 1 no
Ginger garlic paste
: 1 tsp
Green chillies (slit opened)
: 2 nos
Coriander leaves (chopped)
: 2 tbsp

Microwave Cashew Rice


  • Wash and soak the rice with coconut milk and water for 15 minutes, take a microwave bowl, add the ghee, cashew pieces and jeera and microwave for 1 minutes, now add the chopped onion,ginger garlic paste, slit opened green chillies and cook again for 1 minutes, stir in between and cook again for two more minute.
  • Add now the soaked rice along with water&coconut milk and with enough salt, stir everything and microwave for 15 minutes.
  • Stir in between every 5 minutes, while the last 5 minutes make sure the rice is cooked are not, if not you can cook as your need.
  • Add the coriander leaves and serve hot!
