CAULIFLOWER BIRYANI
This extremely simple, vegetarian/vegan Biryani recipe is also very quick to prepare in the sense that it requires no marinating of any of the ingredients.
Ingredients
Oil
: 1 tbsp
Mustard seeds
: 2 tsp
Sesame seeds
: 2 tsp
Basmati rice
: 225gm
Chili powder
: 2 tsp
Turmeric
: a pinch
Ground coriander
: 1 tsp
Garam masala
: 1 1/2 tsp
Water
: 15 ml
Cauliflower cut into florets
: 1 medium
Red capsicum cut into strips
: 1/2
Green capsicum cut into strips
: 1/2
Canned tomatoes
: 400gms
Ginger garlic paste
: 1 tbsp
Salt
: To taste
Method
- Place oil mustard and sesame seeds in a large bowl, heat on high for 1 minute.
- Add rice mix well and cook on high for 2 minutes.
- Mix the chili powder coriander powder, garam masala and turmeric into a paste with the 1tbsp of water and mix the paste with the rice.
- Add all the vegetables except tomatoes and cook on high for 2-3 minutes.
- Add enough boiling water to tomato juice to make 550 ml of water and add it to rice and mix well.
- Cook for 20-22 minutes stirring occasionally.
