CHEESE AND BEETROOT SOUP
It is a quick and easy recipe to make.Cheese Soup is a great tasting smooth and creamy soup.
Blue cheese crumbled
Small chicken stock cube crumbled
In a large microwave bowl combine the butter and beetroot then cover and cook on high for about 6 minutes or until the vegetable are tender.
- Add the water and stock cube then cover and cook on high for another 6 minutes.
- Blend the mixture in batches until smooth then return it to the bowl. Add the cheese and cream and then reheat without boiling.
- Serve the Beetroot and Cheese Soup sprinkled with a little extra cheese on top and cook toast fingers to have with it.
