CHILLI AND BRINJAL PICKLE
Chilli And Brinjal Pickle has a great taste. The malt vinegar and gree chillies gives the Chilli And Brinjal Pickle a fiery taste.
Ingredients
Bottle malt vinegar
: 1
Grated jaggery
: 1/4 kg
Mustard oil
: 1/2 kg
Ginger and garlic paste
: 1 tsp
Chopped green chillies
: 1/4 kg
Roasted and pounded rye
: 1 tbsp
Roasted and pounded cummin seeds
: 1 tsp
Turmeric powder
: 1 tsp
Salt
: 1 tbsp
Brinjal cut into 1/2 squares
: 1 kg
Method
- Microwave covered in a deep bowl 2 tbsp mustard oil, ginger and garlic for 1 minute.
- Stir in green chillies, rye, cummin seeds, turmeric and salt and microwave covered for 1 minute.
- Stir in the brinjal and microwave for 10 minutes, stirring in between.
- Remove from the microwave oven.
- Strain the jaggery and vinegar and mix all the above mixture together with jaggery and vinegar and pour into a sterilized jar.
- Next day top it with mustard oil.
- The oil should cover all the ingredients at all times, Cool and cover the jar.
- The pickle will be ready for consumption after a week and can be stored.
