SPECIAL MICROWAVE CHUTNEY Vegetarian-Dish

Microwave ovens can produce chutneys that are savory and properly thickened without being overcooked using the season's available produce. As jarred chutneys have gotten thinner and tastes more sophisticated, the rewards for making them from scratch are greater.



Ingredients

Cooking apples, peeled, cored and chopped
: 1 pound
Coarsely chopped onion
: 8 ounces
Clove garlic
: 1 crushed
Malt vinegar
: 6 ounces
Soft brown sugar
: 8 ounces
Raisins
: 6 ounces
Ground mixed spices
: 2 tsp
Ground ginger
: 1 tsp
Salt
: 1 tsp
Whole mustard seeds
: 1 tsp
Cayenne pepper
: a pinch

Special Microwave Chutney

Method

  • Put first four ingredients in large bowl. Cover with plastic wrap and pierce. Cook 5 minutes on high. Add remaining ingredients.
  • Stir well. Cook uncovered for 15 minutes, stirring twice. Remove from oven, stir thoroughly. Cover. Leave to mature overnight at room temperature, stirring several times.
  • Next day, stir well, put in jars, seal and label. Use within one year.
