COCONUT CREAMED RICE Vegetarian-Dish

Coconut Rice is one of the most popular food items in Kanyakumari.Coconut Rice makes a deliciously easy side dish that can be served with a variety of dishes such as curries, stir-fried vegetables, plus fish and seafood mains.



Ingredients

Arborio rice
: 200 g
Coconut milk
: 300 ml
Water
: 300 ml
Unsalted butter
: 20 g
Sugar
: 110 g
Banana, sliced
: 1
Shredded coconut, toasted
: 1/2 cup
Coconut milk, extra to serve
: 100 ml

Coconut Creamed Rice

Method

  • Place rice in a colander & wash under cold water until water runs clear. Drain well.
  • Place rice, coconut milk, water, butter & sugar in a 2.5L deep microwave safe bowl or jug and stir to combine.
  • Microwave uncovered on high for 18 minutes, stirring every 6 minutes. Remove, stir & stand for 5 minutes (rice absorbs extra liquid upon standing).
  • Spoon warm rice inbto bowls, drizzle with extra coconut milk and top with banana & coconut.
