INDIAN VEGETABLE DINNER BHAJI Vegetarian-Dish

Do not add water and you will really enjoy this Bhaji, drier variety of an Indian curry. You can add any other vegetables you want to use. Great with breads like naan or paratha or with rice and dhal.



Ingredients

Potatoes, finely chopped
: 4 large
Cauliflower, cut into florets
: 1 cup
Carrot, finely chopped
: 1
Peas
: 1/2 cup
Oil for frying
:
Onion, chopped
: 1 large
Cumin seeds and mustard seeds
: 1 tsp
Bay leaves
: 2
Garlic, finely chopped
: 3 cloves
Minced ginger
: 2 tsp
Green chillies, seeded and finely chopped (or to taste)
: 2
Chilli powder (optional)
: 1/2 tsp
Cumin powder
: 1 tsp
Curry powder
: 1 tsp

Indian vegetable dinner bhaji

Method

  • Half-cook all the vegetables in microwave and drain.
  • Heat some oil and fry onions till golden. Add the seeds and bay leaves and fry for few seconds.
  • Add garlic, ginger and chillies and fry few more seconds.
  • Add all the remaining spices and the vegetables and cook till done.
