FRUITS IN COCONUT-CASHEW GRAVY
It is a colorful medley of fruits simmered in a thick coconut cashew gravy. The dish has a wonderful aroma and also have a Keralite touch along with Coconut and Cashews.
Ingredients
Apple
: 2
Pineapple
: 1
Green grapes(seedless)
: 10
Banana
: 1
Cherries ( for garnish)
: 5
Coconut (grated)
: 1/2 cup
Cashewnuts
: 10
Oil
: 1 tbsp
Salt
: To taste
Chilli powder
: 1 tsp
Method
- Grind the coconut and the cashewnuts with a little water to get a smooth paste.
- Cut the apples into small cubes.Slice the pineapple & the banana into roundels.
- Heat oil in a microwave-safe dish on High for 2 mts.
- Add the ground paste.Cook on High for 4 mts.
- Add salt and chilli powder.Add all the fruits .Cook on High for 4 mts.
- Garnish with the cherries and serve hot.
