Ingredients

Bottle vinegar
: 1 1/2 cups
Kharak (dry dates)
: 10
Jaggery
: 750 gms
Grated carrots
: 1 kg
Pounded garlic
: 15 cloves
Chilli powder
: 1 tbsp
Salt
: To taste

Method

  • Take out kharak from vinegar after soaking for about 1/2 hour and discard the seeds and slice thinly.
  • Keep aside.
  • Microwave vinegar with jaggary for 2 minutes so that jaggery melts.
  • Cool and strain through a muslin cloth.
  • Mix in carrots and microwave for 15 minutes stirring in between.
  • Cover only when the ingredients become cool.
  • Stir in the rest of the ingredients and microwave for 20 minutes at medium 50% power.
  • Cool.
  • Bottle in air tight sterilized jars.
  • The pickle is ready to be served.
