LIMA BEANS Vegetarian-Dish

Sometimes called "butter beans" because of their starchy yet buttery texture, lima beans have a delicate flavor that complements a wide variety of dishes. Although fresh lima beans are often difficult to find, they are worth looking for in the summer and fall when they are in season. Dried and canned lima beans are available throughout the year.



Ingredients

Frozen lima beans
Chopped onion
: 1/2
Whole kernel corn
Sour cream
: To Taste
Flour
: 1/4
Milk
: To Taste
Shredded cheddar cheese
: To Taste
Pepper
: 1/2 tsp
Salt salsa
: (if desired)

Lima Beans

Method

  • In a 1 1/2 quart covered casserol, cook lima beans, onion and 1/4 c. water for 3 min.
  • Add corn and cook covered for 7 min. Drain.
  • Mix sour cream, flour, milk, and cheese.
  • Mix into beans. Cook uncovered for 3 min. Stir well.
