MINTED FRESH PEAS Vegetarian-Dish

Garden peas with fresh mint is one of many healthy recipes. Fresh spring peas cooked with a bit of onion and seasoned with mint makes a refreshing, surprisingly hearty recipe.



Ingredients

Green peas, shelled
: 3 lb
Finely chopped fresh mint or
: 1 1/2 tsp
Dried mint leaves
: 1/4 tsp
Lettuce leaves
: 8 lg
Salt
: 3/4 tsp
Pepper
: 1/8 tsp
Sugar
: 3/4 tsp
Butter or margarine
: 3 tbsp

Minted Fresh Peas

Method

  • Wash lettuce leaves and line a deep, 1 1/2-quart, heat- resistant, non-metallic casserole with half of the moist lettuce leaves. Top with peas.
  • Sprinkle peas with sugar, salt, pepper, and mint and dot with butter.
  • Cover peas with remaining lettuce leaves.
  • Heat, covered tightly,in Microwave Oven 9 minutes or until peas are tender.
  • Carefully tilt cover to allow steam to escape. Then remove cover.
  • Remove lettuce leaves and toss peas well before serving.
