NAVRATAN KURMA Vegetarian-Dish

Navratan Kurma is a splendid vegetable delicacy which was created centuries ago for the Mughal emperor Akbar. Navratan means nine jewels and refers to the number of vegetables in the dish. It is prepared from nine varieties of fresh vegetables cooked in a creamy sauce and flavored with herbs, spices and cashews. This traditional Mughlai dish goes well with Indian breads such as Naan and Chappati.



Ingredients

Onions
: 225 gms
Tomatoes(pureed)
: 500gms
Peas
: 100gms
Potatoes( chopped)
: 200gms
Cauliflower(chopped)
: 125gms
French beans(chopped)
: 75gms
Paneer
: 3/4 tsp
Cumin seeds
: 2 tsp
Bay leaves
: 2
Green cardamons
: 4
Cloves
: 4
Cinnamon
: 1"
Nutmeg(grated)
: a pinch
Mace powder
: a pinch
Garlic
: 4 cloves
Ginger
: 1
Green chilies
: 2
Red chili powder
: 1 tsp
Salt
: To taste
Garam masala powder
: 1 tsp
Coriander powder
: 3/4 tsp
Coconut milk
: 400ml
Oil
: 3 tbsp

Navratan Kurma

Method

  • Grind the onions, ginger, green chilies and garlic to a paste
  • Heat oil in a 2 litre deep bowl on 100% power for 1 1/2 mins
  • Add the cumin seeds, bay leaves, green cardamoms, cloves, cinnamon stick , mace, nutmeg and microwave on 100% power for 1min
  • Add the onion paste. Mix well and microwave on 100% power for 8mins
  • Add salt, red chili powder, garam masala powder , coriander powder and pureed tomatoes. Mix and microwave on 100% power for 5mins
  • Add in the peas , potatoes, cauliflower and beans and microwave on 100% power for 8-10 mins or till the vegetables are cooked.Stir twice during cooking
  • Finally add the paneer cubes and coconut milk. Mix and microwave on 100% for 3mins
  • Allow it to stand covered for 5mins before serving.
  • Serve hot with rotis.
