NAVRATNA PULAO Vegetarian-Dish

Navratan Pulao is a very popular recipe.This is a Mughlai variety of rice which is quite rich and delicately spiced. It tastes great and superb .



Ingredients

Rice (360 gms) washed, soaked for 1 1/2 hour
: 2 cups
Ghee
: 1 tbsp
Cumin
: 1 tbsp
Onions sliced fine
: 1/2 cup
Green Peas
: 1/2 cup
Potato peeled and cubed
: 1 cup
Paneer ( Cottage cheese )
: 1/2 cup
Carrot cubed
: 1/2 cup
Mushrooms finely chopped
: 1/2 cup
Kaju (Cashewnuts)(50 gms ) halved and roasted
: 1/2 cup
Almonds(50 gms) dry roasted
: 1 1/2 tsp
Lotus Seeds (Makhana)(25 gms)
: 1/2 cup
Kishmish (Raisins 30 gms )
: 1/4 cup
Tomato Puree (125 gms)
: 1/2 cup
Salt
: 1 1/2 tbsp
Garam Masala
: 1/2 tbsp
Hot water
: 3 1/2 cups
Kewra (vetivier)
: 1 tsp

Navratna Pulao

Method

  • Mix 1½ tsp ghee and zeera in a deep dish. Cook covered at HI for 1 minute.
  • Add onions and cook uncovered at HI for 10 minutes, stirring once, till brown.
  • Add the potato, paneer, and 1½ tsp ghee. Mix it well and cook covered at HI for 5 minutes, stirring once.
  • Mix in the peas, carrot, mushrooms, kaju, badaam, makhana and kishmish. Cook covered at 70 % for 5 minutes.
  • Add rice (water drained), tomato pure, salt, garam masala and water. Stir and cook covered at HI for 10 minutes, then at 70% for 10 minutes.
  • Stir in the kewra and cook covered at 30% for 5 minutes. Serve immediately.
