The chutney is very easy to make, and will keep for a couple of weeks in the fridge; although unless you make quite a lot, you are not likely going to have to worry too much about leftovers, as this stuff goes very well with a whole lot of great summer fare.


Diced fresh pineapple (1/2-inch dice)
: 2 cups
Granulated sugar
: 3/4 cup
Golden raisins
: 1/3 cup
White vinegar
: 1/3 cup
Minced crystallized ginger
: 1/4 cup
Diced red bell pepper
: 2 tbsp
Minced onion
: 2 tbsp
Lime juice
: 1 tbsp
Garlic, minced
: 1 clove
Ground cinnamon
: 1/4 tsp
Cayenne pepper
: 1/8 tsp

Microwave pineapple chutney


  • Stir together ingredients in a 1 1/2-quart, microwave-safe dish. Cook, uncovered, on High for 8 minutes.
  • Remove from microwave oven and stir. Return to oven and cook another 8 minutes. Allow the chutney to cool slightly, cover tightly, and refrigerate.
  • Will keep up to 2 days in the refrigerator.
