MICROWAVE PINEAPPLE CHUTNEY
The chutney is very easy to make, and will keep for a couple of weeks in the fridge; although unless you make quite a lot, you are not likely going to have to worry too much about leftovers, as this stuff goes very well with a whole lot of great summer fare.
Diced fresh pineapple (1/2-inch dice)
: 2 cups
: 3/4 cup
Minced crystallized ginger
: 1/4 cup
Diced red bell pepper
: 2 tbsp
: 1/4 tsp
Stir together ingredients in a 1 1/2-quart, microwave-safe dish. Cook, uncovered, on High for 8 minutes.
- Remove from microwave oven and stir. Return to oven and cook another 8 minutes. Allow the chutney to cool slightly, cover tightly, and refrigerate.
- Will keep up to 2 days in the refrigerator.
