RAJASTHANI GATTE KI KADI Vegetarian-Dish

A traditional Rajasthani dish made of Besan/Granflour cooked in tomato yogurt gravy. Some people may like to shallow/deep fry the gattas before cooking in gravy.



Ingredients

For Gattas
Gram flour (besan)
: 3/4 cup
Oil
: 2 tbsp
Red chilli powder
: 1 tsp
Black pepper
: 1/4 tsp
Oregano (ajwain)
: 1/4 tsp
Aniseed (saunf)
: 1/2 tsp
Curd
: 1/2 tsp
Salt
: To taste
For Kadhi
Sour curd (beaten)
: 2 cups
Gram flour (besan)
: 1 tbsp
Curry leaves
: 6 - 8
Cumin seeds (jeera)
: 1 tsp
Mustard seeds
: 1/2 tsp
Aniseed (saunf)
: 1/2 tsp
Asafoetida (heeng)
: a pinch
Turmeric powder (haldi)
: 1/4 tsp
Red chilli powder
: 1 tsp
Oil
: 1 tsp
Dry red chillies
: 2 - 3
Salt
: To taste
Green coriander
: To garnish

Rajasthani Gatte Ki Kadi

Method

  • Mix all the ingredients for gattas and knead into a firm dough (use water if required).
  • Divide the dough into 6 - 8 equal portion and roll into cylindrical shapes to get almost 4" long rolls. Rub a little oil on your palms.
  • Put these rolls in 2 cups of water in a microwave safe bowl. Microwave at 100% power for 6 - 7 mins.
  • Drain out extra water and cut the gattas into small pieces.
  • Beat curd, gram flour and 1/4 cup water together.
  • In a microwave safe bowl microwave oil at 100% power for 30 secs.
  • Add all dry spices for kadi and microwave at 100% power for 2 - 3 mins.
  • Mix the beaten curd-gram flour mixture and kadi. Stir & microwave for 4 - 5 mins. at 100% power. Now add prepared gattas to it.
  • Microwave (covered) at 80% power for 2 - 3 mins.
  • Garnish with fresh coriander leaves.
