RED LENTILS WITH CARROTS Vegetarian-Dish

If you're on a vegan diet, this is something that will leave you happy and fullfilled.This could be used as a side dish or a complete meal.The great thing is that those beautiful red lentils cook very quickly, as quickly as the carrots.



Ingredients

Red lentils
: 1 1/2 cups
Vegetable or chicken broth
(or 2.5 cups boiling water + 1 bouillon cube)
: 2 1/2 cups
Chopped onions
: 1 cup
Chopped carrots
: 1 cup
Peas, frozen
: 1 cup
Salt
: To taste

Red Lentils With Carrots

Method

  • Place all ingredients (except frozen peas) in large 8-cup measure. Microwave on HIGH for about 10 minutes.
  • Add 1 cup frozen peas (they cook in lentils, and cool it down so you can eat immediately).
  • Consider stirring in juice of 1 lime, 1 tsp. olive oil, chopped parsley, and garnishing with chopped almonds.
