MICROWAVE RICE PILAFF
Foolproof and easy to prepare. Dish can be made ahead and reheated before serving. You can freeze the leftovers and it works very well.
Ingredients
Butter
: 1/4 cup
Long-grain rice, white
: 1 1/2 cups
Onion, finely chopped
: 1 medium
Garlic cloves, crushed
: 2
Celery, finely chopped
: 1 stalk
Chicken broth
: 3 cups
Dried thyme
: 1/4 tsp
Parsley
: 1 tbsp
Method
- In a 2 qt casserole dish, combine butter, rice, onions, celery and garlic.
- Microwave 5 minutes on High.
- Add chicken broth, thyme and parsley.
- Cover and cook 15 minutes stirring twice during cooking time.
- Let stand 10 minutes to finish cooking before serving.
