MICROWAVE SOUTH INDIAN SPECIAL SAMBHAR Vegetarian-Dish

This Sambar recipe is one of the most loved dishes in South Indian cuisine. It accompanies most every meal.Sambar is a spicy and aromatic preparation which has for years been liked by many people in India.



Ingredients

Arhar dal (toor dal)
: 1/2 cup
Onions (chopped)
: 2
Potatoes (chopped)
: 2
Brinjals(chopped)
: 2
Red pumpkin (chopped)
: 1 cup
Drum stick (swanjne ki phalli) (cut into 4 pieces)
: 1
Tomatoes
: 2
For Tempering
Tamarind paste (imli)
: 1 tbsp
Chilli powder
: 1 tsp
Turmeric powder (haldi)
: 1/2 tsp
Oil
: 2 tsp
Mustard seed
: 1 tsp
Curry leaves
: 5 - 6
Dry red chilli
: 2 - 3
Sambar powder
: 2 tbsp
Asafoetida (heeng)
: A pinch
Salt
: To taste
Water
: 7 cups

Microwave South Indian Special Sambhar

Method

  • Wash and soak dal for 15 - 20 mins. Drain the water.
  • Add 6 cups of water, salt and turmeric powder. Microwave in a microwave safe bowl at 100% power for 12 mins.
  • Allow to stand (covered) for 10 mins.
  • Microwave oil at 100% power for 30 secs in a separate microwave safe bowl.
  • Add mustard seeds, curry leaves, red chillies, and asafoetida and chopped onions. Microwave at 100% power for 2 mins.
  • Add remaining chopped vegetables and 1 cup of water. Microwave (covered) at 100% power for 6 - 7 mins.
  • Mix these cooked vegetables with the cooked dal.
  • Add sambar powder and tamarind paste. Microwave covered at 100% power for 5 mins.
  • Allow to stand for 5 mins.
  • Serve with hot dosa, idli, vada or boiled rice.
