SWEET CORN BIRYANI Vegetarian-Dish

This is a recipe which involves sweet corn cooked with blended herbs and spices with basmati pilau rice.



Ingredients

Basmati rice
: 1 cup
Oil
: 2 tbsp
Ghee
: 1 tsp
Sweet Corn
: 3/4 cup
Yogurt
: 1/4 cup
Nonfat Milk
: 1/4 cup
Water(Hotl)
: 2 3/4 cups
Onion
: 2
Tomato
: 1
Lemon juice
: 1 1/2 tbsp
Bay leaf
: 1
Turmeric powder
: 1/2 tspn
Cumin seed
: 3/4 tspn
Salt
: 1 1/4 tspn
Sugar
: 1/4 tspn
Ginger
: 1 inch
Clove garlic
: 1
Cinnamon stick
: 1 inch
Cloves
: 4
Cardamon(small)
: 1
Mint leaves
: 10
Coriander leaves chopped
: 2 tbsp
Coconut grated
: 3 tbsp
Chilies
: 2
Cashnews,raisins,roasted in ghee
: 1/4 tspn

Sweet Corn Biryani

Method

  • Microwave oil and ghee mixture on HIGH for 1 minute uncovered.
  • Add bay leaf, cumin seeds and onion.
  • Mix and microwaveon HIGH for 5 minutes uncovered.
  • Add the ground paste, turmeric powder and tomato.
  • Mix and microwave on HIGH for 2 minutes uncovered.
  • Add rice.Mix and microwave on HIGH for 2 minutes uncovered.
  • Stir in the low-fat yogurt, milk, salt and hot water.
  • Microwave on HIGH for 6 minutes uncovered.Fluff up the rice.
  • Add sweet corn, lemon juice and sugar.Mix and microwave on HIGH for 6 minutes uncovered.
  • Microwave further on HIGH for 3 minutes covered.Allow standing time of 2 minutes.
  • Serve garnished with cashews, raisins and mint leaves.
  • Serve hot with onion-tomato raita!
