Tapioca pudding (similar to sago pudding) is a sweet pudding made with tapioca and either milk, or for lactose intolerant individuals, coconut milk. It is made in many cultures with equally varying styles, and also has a wide variety of ways it is made.

Combine milk, 1/4 cup sugar, tapioca, salt and egg yolks in 4-cup glass measure; mix well.
- Microwave for 8 minutes. Stir and micro-wave for 6 to 7 minutes or until mixture boils.
- Beat egg whites in small mixer bowl until frothy. Gradually add 2 tablespoons sugar, beating until mixture forms soft peaks. Beat in vanilla. Fold egg white mixture into pudding. Serve warm or cold.
