MICROWAVE VANILLA PUDDING Non-Vegetarian-Dish

Sometimes all we need to satisfy a craving is a bowl of creamy smooth vanilla pudding. Homemade vanilla pudding is an easy dessert as it uses ingredients we usually have in our pantries, milk, eggs, sugar, and vanilla, and it can be made quickly with a minimum of fuss. It looks so enticing when served in pretty bowls with a dollop of softly whipped cream and maybe a small handful of toasted and chopped walnuts sprinkled on top.



Ingredients

All-purpose flour
: 1/3 cup
Sugar
: 1/2 cup
Salt
: 1/8 tsp
Fat-free milk, divided
: 2 cups
Egg substitute
: 1/4 cup
Vanilla extract
: 1 tsp

Microwave Vanilla Pudding

Method

  • Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, sugar, and salt in a medium microwave-safe bowl; gradually add 1 3/4 cups milk, stirring well with a whisk.
  • Microwave at HIGH 4 to 5 minutes or until thick, stirring after every minute.
  • Combine 1/4 cup milk and egg substitute in a large bowl. Gently stir one-fourth of milk mixture into egg substitute mixture; add to remaining hot milk mixture.
  • Microwave at HIGH 1 minute; stir well. Stir in vanilla. Pour into a bowl; cover surface of pudding with plastic wrap. Chill.
